  • 1 can chickpeas, grilled or baked 
  • 2 cups mixed greens (spinach, arugula, watercress) 
  • 1/2 cup cherry tomatoes, halved 
  • 1/4 cup cucumber, sliced 
  • 1/4 cup olives, sliced 
  • 2 tablespoons olive oil 
  • 1 tablespoon balsamic vinegar 
  • Salt and pepper to taste

Step 1

Arrange mixed greens on a plate and top with grilled chickpeas.

Step 2

Add cherry tomatoes, cucumber, and olives. 

Step 3

Drizzle with olive oil and balsamic vinegar. Season with salt and pepper. Enjoy!
