  • 2 medium sweet potatoes, peeled and diced 
  • 1 carrot, chopped 
  • 1 onion, diced 
  • 2 cloves garlic, minced 
  • 4 cups vegetable broth 
  • 1 teaspoon turmeric 
  • 1/2 teaspoon cinnamon 
  • Salt and pepper to taste 
  • 1/4 cup coconut milk (optional)

Step 1

In a pot, sauté onion and garlic until translucent. 

Step 2

Add sweet potatoes, carrot, vegetable broth, turmeric, and cinnamon. Simmer until vegetables are tender. 

Step 3

Blend the mixture until smooth, and add coconut milk if desired. Season with salt and pepper. Enjoy!
